Origin story

The croissant is often called the most French food in the world. It is not French.

Its ancestor is the Austrian kipferl, a dense crescent-shaped bread mentioned in a Viennese poem from 1227 as one of the pastries Viennese bakers brought to Duke Leopold. The kipferl was popular throughout Central Europe for centuries before any French baker got near it.


The romantic origin story is the one most people know: in 1683, the Ottomans laid siege to Vienna. A baker, working through the night, supposedly heard the Turks tunneling under the walls and alerted the guards. As a reward, he was given exclusive rights to bake a crescent-shaped bread mocking the crescent on the Turkish flag. This legend first appeared in print in 1938 in Alfred Gottschalk's entry for the Larousse Gastronomique. Since the kipferl existed at least 450 years before the siege, the story is a fabrication. It's a great myth but not history.
