Origin story

Ramen is a Chinese dish that became Japanese. It arrived in Japan with Chinese immigrants in the late 19th century, particularly in the port cities of Yokohama, Kobe, Nagasaki, and Hakodate. Early Japanese diners called the dish "Nankin soba" ("Nanjing noodles") or later "shina soba" ("Chinese noodles"), the latter coined in 1910 by Kan'ichi Ozaki, who opened what's considered the first specialized ramen shop, Rairaiken, in Tokyo's Asakusa district.

After World War II, the term "shina" became unacceptable because of its association with Japanese imperial racism, and the dish was renamed chลซka soba ("Chinese-style noodles") and eventually just ramen, from the Chinese lamian (pulled noodles).


The 20th-century transformation came from Momofuku Ando, a Taiwanese-born Japanese inventor who watched postwar Japanese workers queuing at black-market ramen stalls and wondered if he could shelf-stabilize the dish. In 1958, after a year of experiments in a backyard shed in Ikeda, Osaka, Ando invented Chicken Ramen, the world's first mass-market instant noodles. He realized that frying pre-cooked noodles in oil dehydrated them, allowing years of shelf life and two-minute reconstitution in boiling water.


In 1971, Ando followed up with Cup Noodles: a styrofoam cup with freeze-dried noodles, toppings, and flavor powder already inside. You just added hot water. A Japanese poll later named instant ramen the greatest Japanese invention of the 20th century, beating Walkman, bullet train, and karaoke.


From one port city in 1884 to 120 billion servings consumed globally in 2023, ramen is the clearest example of how fast a food can conquer the world. Japan absorbed it from China, industrialized it, and exported it back.

In Japan, ramen is regional religion. Every prefecture has its own style. The four broth tares are shio (salt, the oldest), shoyu (soy), miso (developed in Sapporo around 1965), and tonkotsu (pork bone, invented in Fukuoka in 1937). Sapporo miso ramen traditionally comes topped with butter and sweetcorn for Hokkaido winters; Hakata tonkotsu is rich, milky, and served with thin straight noodles; Kitakata (Fukushima) is shoyu-based with curly noodles; Tokyo's classic is soy-based with firm noodles.
