Dating apps are a particular hotspot. Sushi is one of the most safely "good-taste" foods to put in a bio. It signals middle-class, foodie-but-not-snobby, open to nice dinners. Unlike 🍕 (casual, friend zone energy) or 🦞 (show-off), 🍣 lands in the sweet spot of "let's get sushi" being both a real plan and a soft romantic suggestion.

Sushi dwarfs every other Japanese food emoji in global English search traffic. Averaging 65-90 on the 100-point scale, it's roughly 2-3x bigger than ramen and 6-10x bigger than bento or dango. The most recent quarter (2026-Q1) shows search interest at a multi-year high of 90, suggesting sushi's cultural momentum continues to grow.

Origin story

Sushi has a much older, stranger history than most people realize. The proto-sushi was nare-zushi, a Southeast Asian fermentation method that reached Japan by the 8th century. Fish was packed in salted rice and left to ferment for months; the rice was discarded and only the pickled fish was eaten. This was nothing like modern sushi.

Modern sushi only emerged in the 1820s in Edo (Tokyo), when a chef named Hanaya Yohei invented nigiri-zushi: a small hand-pressed rice ball topped with a slice of fresh fish. He set up a yatai (food stall) in Ryōgoku around 1824, and the innovation caught on because it was fast, cheap, and portable, essentially Edo fast food for workers on the go.


The second major leap came in 1958 when Yoshiaki Shiraishi opened Mawaru Genroku Sushi in Higashiosaka, the world's first conveyor-belt sushi restaurant. Shiraishi had been inspired watching beer bottles move along a brewery line at Asahi. Kaiten-zushi democratized sushi: what had been an expensive meal became affordable enough for families.


The third major leap was the 1970s California Roll, invented in Los Angeles to make sushi palatable to Americans who were squeamish about raw seaweed and raw fish. That invention, along with post-war US occupation's exposure of servicemen to Japanese food, set up sushi's late-20th-century global explosion. Today over 55,000 sushi restaurants operate worldwide.

Design history

Is 🍣 nigiri, maki, or sashimi?

Nigiri. The emoji depicts fish on top of a small oval of pressed rice, which is the nigiri style. Maki (cylindrical rolls wrapped in seaweed) and sashimi (sliced raw fish without rice) don't have their own emojis. Most people use 🍣 to mean any sushi in conversation, even though it technically shows one specific type.

Why does 🍣 look different on Android vs iPhone?

Apple has shown two pieces of salmon nigiri since 2010, which became the defining design. Google's Android originally showed a darker, more abstract version and initially depicted maki rolls; the 2017 Android 8.0 refresh switched to a single piece of salmon nigiri closer to Apple's. Samsung, Microsoft, and Twitter each have their own takes, but all now render nigiri-style sushi.

Around the world

For Japanese users, 🍣 is a specific thing: Edomae-style nigiri, typically eaten at a counter, ideally fresh from Toyosu Market that morning. The food-ranking irony is that in a 2022 Japanese survey sushi was still the #1 national favorite, but in a survey of foreign tourists visiting Japan, ramen has overtaken sushi as the most-loved food.

For American users, 🍣 more often conjures rolls: California roll, spicy tuna, dragon roll, rainbow roll. The California roll alone gets 613,800 Google searches per month. Nigiri is less common in American sushi culture outside of higher-end restaurants.


For UK, European, and other international users, sushi is usually grocery-store maki rolls from chains like Itsu, Wasabi, or Sainsbury's. It's become a normal grab-and-go lunch rather than an occasion meal.


One specific cultural friction: some Japanese food writers push back against the California roll being called sushi at all. TasteAtlas rankings of Japanese cuisine tend to exclude fusion rolls entirely. The emoji itself stays neutral by depicting nigiri, which is universally accepted as canonical.
